It’s December –like, hold the phone- IT’S DECEMBER!!!-and can you believe that it’s December already? When did this happen? The rains keep making an appearance and the temperatures keep hitting an all-time low and ambuya’s knitted jersey is becoming a little too normal for summer.
Now that it’s the holidays, the weather and additional free time make it more appealing for me to get up super early, move around in my PJ’s, grab a cookie, and watch one more episode of the blacklist.
I absolutely love cookies and I will capitalise on this rainy chilly weather to eat as many as I can and binge watch all the TV shows I missed during the school season. I know for a fact that I will pay for this when I can barely fit into my jeans but until then THIS IS MY TIME TO RELAX. This weather is begging for some classic cookies –yummy, filling and just addictive.
The thing about cookies is that they can be tailored to suit you and so I am going to share my favorite cookie recipe –keep in mind I am no chef.
1 cup plain flour
¾ teaspoon baking powder
3/4 cup castor sugar
1 cup of old fashioned oats
¾ cup of desiccated coconut
2 tablespoons of hot water
1.Preheat oven to 150 degrees Celsius .Sift flour into mixing bowl and add sugar,coconut and oats. Make sure that you mix well.
2.Put baking powder in a jar and add tablespoons of boiling water and stir.
3.Add margarine to the saucepan
4.When margarine has melted and you have switched off your stove add the baking powder .Then pour the mixture to the flour and mix thoroughly.
5.Grease the baking sheet with margarine.Using your hands ,make reasonable sized balls and place them slightly apart from each other .Flatten the balls with the back of a fork and bake them in the oven for around 25mins or until they are brown.
6.When you are satisfied they are done,place them onto a cooling rack and leave them for 15 mins.Once cool serve.
